Kiwi Coolers with Chia + Mint Ingredients 3 kiwi fruits 2 sprigs mint 1 lemon 50 g honey 1 tbsp chia seeds 600 g ice cubes 660 ml lemonade 4 g edible flowers | Method- Preheat an oven to 70°C, or as low as it will go while using a tea towel to prop the door open. Peel 1 of the kiwi fruits and cut crosswise into 1⁄2cm discs. Place them onto a wire rack over a baking tray and dehydrate in the oven for 3-4 hours.
- Peel the remaining 2 kiwi fruits, roughly chop and add them to a mini food processor with the leaves from 1 sprig of mint. Squeeze in the juice of the lemon and add the honey. Blitz to a smooth paste, transfer to a bowl and add the chia seeds. Leave to rest in the fridge for 1 hour.
- Divide the kiwi chia mix between 6 highball glasses. Fill the glasses with ice cubes, pour over the lemonade and garnish with dehydrated kiwi slices, mint leaves and flowers. Mix before drinking.
