Oysters With Shallot Vinaigrette
Oysters With Shallot Vinaigrette
2 banana shallots
60 ml red wine vinegar good quality
24 fresh oysters
  1. Peel and dice the shallots as finely as possible. Pour the red wine vinegar into a small bowl and add the shallots. Leave the shallot vinaigrette in the fridge until needed.
  2. Shuck the oysters with an oyster knife, using a towel to protect your hands (it's a good idea to find a video showing the correct technique).
  3. Clean the oyster of any grit or broken shell if it can be seen, detach the oyster from the bottom shell and turn them over if it looks better. Spoon about 1⁄2 tsp of the shallot vinaigrette onto each oyster and serve over ice.
