That’s something that often happens when you’re travelling, and<b>John travels a lot; often to undiscovered places </b>to learn about the food, cuisine and culture.</p><!– –><!– –><p>One place that John has explored extensively is Palestine and it’s there that he first tried Musakhan. It’s a <b>celebratory dish that’s made to feed a big crowd</b>. The traditional recipe calls for huge flatbreads filled with chicken, caramelised onion, nuts and spices and takes a while to make but is absolutely worth it.</p><!– –><!– –><p>The first time John ate the dish was in a small village called Sabastia in northern Palestine – he arrived early in the morning to cook lunch with a family and they made this epic dish. <b>All of the neighbours came over </b>and ate together in the family’s courtyard. The breads were literally soaked in the onions so they had loads of flavour. They all ripped off pieces of bread and had it with the chicken and a simple chopped salad.</p><!– –><!– –><p>Now John often cooks the spiced chicken to go with other dishes, but the whole thing…? That’s for special occasions only. He mentions that it’s great to fancy the dish up with pomegranate seeds and serve with a very lemony yogurt and tahini but for this recipe it’s kept simple, letting the flavours of the onion, chicken and spices really sing.</p><!– –><!– –><p>The fact that he’s so well travelled, and has had the opportunity to have a lot of these bucket list worthy foodie experiences, shows just how special this dish is. He says that Palestine was <b>one of the most amazing trips </b>he has ever experienced and hopefully this dish represents that.</p><!– –><!– –></div><!– –></div><!– –></div><!– –></div><!– –><!– –>[/wcm_restrict]
