Ever since he got really interested in food he has had a fascination with fine dining. One of the first experiences he had was in a restaurant in Paris. Even though the staff were friendly he found it so intimidating, having to wear a shirt and tie and worrying about the price of everything the whole way through. He felt a little bit ridiculous but it was all worth it for the amazing food.</p><!– –><!– –><p>Now the trend is to be much more relaxed. The chefs come and serve you food. The staff have fun and joke and will show you around if you show an interest. It’s much more open and inclusive… <b>something that everyone should try at least once</b>.</p><!– –><!– –><p>His favourite way to eat is to have no choices. The menu has been designed to flow in a way that the chefs think is best. If he can afford it he’ll go for the wine pairing too, because then he doesn’t have to worry about anything for the whole evening… just a <b>continuous flow of little tastes </b>that are surprising and eye-opening.</p><!– –><!– –><p>James remembers one of the best dishes he’s eaten is lamb with lettuce and crumpets. He realises that written down it might seem a bit unremarkable but he’s adamant that it was amazing. The problem is that the food is so refined and so well tested by some of the best chefs in the world that it’s really <b>tough to replicate at home</b>. He loves eating something that he knows he could never recreate but has given it a go here.</p><!– –><!– –><p>The recipe begins with rendering lamb trimming. There are a few unusual ingredients to grab but you can get so much from butchers, markets and online now that it’s never too difficult if you really want to cook something! From the trimming, you get the delicious fat to cook the crumpets in. To go with it there’s a rich, <b>sweet black garlic mayo </b>that is also used to rub the lamb rack so that it gets a really brown crust. That’s where all the flavour is.
