Now, he’s pretty clear that this wasn’t a bad thing (it’s an amazing way to experience a new place) but one night after a long day of filming, Donal and his guide went out to get some <b>proper street food .</b></p><!– –><!– –><p>The guide, TT, took him to places that were totally packed out and had little plastic stools to sit on and enjoy the fresh food. These vendors are the people who are true artisans and experts at making the one specific dish that they sell. It also happens to be incredibly well priced.</p><!– –><!– –><p>The dish was simple: <b>green papaya salad with loads of herbs, beef jerky and peanuts</b>. It was all finished off with an amazing fish sauce dressing.</p><!– –><!– –><p>The beef jerky was what Donal was most intrigued by. He expected fresh beef and instead, it was chewy and sticky and sweet, sliced very finely. He describes the salad in a very ‘food writer’ style as <b>electric</b>.</p><!– –><!– –><p>This is the dish that he will always go back to when he goes to Hanoi and the dish that always comes to mind when he finds green papaya, although he is yet to try cooking that beef jerky that finishes the dish so well. This recipe is as close as possible to that dish he tried, complete with jerky and an attempt at recreating that <b>amazing dressing</b>.</p><!– –><!– –><p>This recipe keeps the essence of simplicity and balance. The fresh, herby salad is topped off with that amazing spicy beef jerky that almost rehydrates in your mouth, releasing the flavour slowly. <b>The dressing is all important </b>and it’s balanced enough that you can really add lashings of it.
