Ingredients
1.5 l chicken stock
1 l water
2 tsp salt
1 tbsp caster sugar
1 pinch ground coriander
1 pinch cinnamon powder
1 small white cabbage
2 brown onions
2 leeks
100 g bacon lardons unsmoked
Method
  1. Put a large pan over a high heat and pour in the stock and the water. Add the salt, sugar, coriander and cinnamon then bring to a boil.
  2. Roughly chop the cabbage into 2cm pieces. Peel and dice the onions. Cut the leeks in half lengthways, wash and slice them. Add the cabbage to the stock and simmer for 10 minutes, then add the onions and leeks. Simmer for another 10-15 minutes.
  3. While the soup simmers, heat a frying pan over a high heat. Add the lardons and fry until golden and crispy. Pour the bacon and the fat into the soup and stir well. Taste and season with salt and pepper if necessary.
  4. Serve with fresh bread and butter.
