Ham & Manchego Quesdillas

Ham & Manchego Quesdillas
250 g Manchego cheese
200 g thick cut ham
1⁄2 bunch coriander
1 red chilli
8 flour tortillas
2 tbsp vegetable oil
100 g sour cream
100 g guacamole
  1. Grate the cheese and roughly chop the ham. Finely chop the coriander. De-seed and dice the chilli. Throw all of the prepared ingredients into a mixing bowl and combine. Lay out 8 tortillas and divide your filling mix between them. Place the remaining 8 tortillas on top to sandwich the filling.
  2. Pour 1⁄2 tbsp of oil into a shallow frying pan and add a quesadilla. Fry until golden brown and starting to go crisp, then flip and repeat on the other side. Repeat for all 4 quesadillas, adding more oil to the pan each time if necessary.
  3. Serve with the sour cream and guacamole.
