Sugar Beet Latkes

Probably considered Eastern European, these have and American and Indian twist. The sugar beets makes this twist pleasantly sweet.
- dollop sour cream
- vegetable oil
- 1½ tsp kosher salt
- 1 tsp ground cardamom
- 3 eggs
- 1 cup flour
- 1 medium sugar beet
- 1 thumb root ginger
Peel and grate sugar beet. This should yield 4 to 4.5 cups of beet.
Sugar beets aren't typically found in grocery stores. If you don't know a sugar beet farmer or don't grow them yourself you can substitute potatoes and add a little sugar to the mixture to keep the same flavor profile.
Sprinkle grated beets with salt. Lest rest 20 minutes and then squeeze out excess moisture.
In a large bowl mix flour and cardamom. Peel ginger root and grate in. Mix in sugar beets. Lightly beat eggs in a small bowl and then mix into sugar beets until everything is fully combined.
Warm a couple tablespoons of oil in a pan. Using an ice cream scoop form mixture into round balls and transfer to pan.
Press balls flat with spatula and fry on both sides until golden brown. Approximately 4 to 5 minutes on a medium heat.
Continue cooking until you use all of the mixture. Add a little oil as needed. Makes 8-10 latkes.
Serve with a dollop of sour cream.
