Recipe: Black Garlic Hummus

BLACK GARLIC HUMMUS

A twist on a classic

Ingredients

  • ½ lemon, squeezed
  • A few sprigs parsley
  • 4 cloves black garlic
  • 1 tsp sea salt
  • 3 tbsp extra virgin olive oil
  • 400 g chickpeas
  • 2½ tsp tahini

Step 1

Drain

Drain the chickpeas, and reserve the liquid and two or three chickpeas.

Step 2

Combine

Add the chickpeas, tahini, salt, black garlic and juice of half a lemon into a blender and combine. Scrape down the sides and pulse until all the chunks have been blended.

Step 3

Add

With the blender running, drizzle in olive oil until you reach your desired consistency; I do less because I prefer a thicker hummus, but you can add more oil for a thinner consistency.

Step 4

Serve

Serve with remaining chickpeas, a sprinkle of parsley and a drizzle of oil if desired! Enjoy!
