We have kept things very simple in this recipe, but you don't have to. Bacon, lettuce, and tomatoes make great burger additions. (2 People)
2 ea large sweet potato(es)
4 tbsp vegetable oil
2 tsp smoked paprika
1 ea red onion(s)
2 g Gherkins
1 tbsp tomato ketchup
1 tbsp mayonnaise
1 tsp Dijon mustard
400 g beef mince
4 ea American style cheese slices 2 ea brioche burger bun(s)

1 - Preheat
Preheat the oven to 200°C, this will be for the wedges later.
2 - Prep the potatoes
Wash 2 large sweet potatoes and cut them into 9-12 wedges each.
3 - Get ready to roast
Toss the wedges with 3 tbsp of oil, 2 tsp of smoked paprika, and a generous pinch of
salt on a large baking tray. Position them skin-side down on the tray.
4 - Roast
Roast in the oven for 25-30 minutes, until golden brown and soft throughout. Get on
with the rest of the dish in the next steps while you wait.

5 - Prep the onions
Halve and peel 1 onion. Very thinly slice 1 half, then very finely dice the other.
6 - Chop up the gherkin Finely dice 1 gherkin.
7 - Assemble the sauce
Add the diced onion, diced gherkin, 1 tbsp of tomato ketchup, 1 tbsp of mayonnaise,
and 1 tsp of Dijon mustard to a small mixing bowl.
8 - Mix it up
Stir to combine, then season to taste with salt and pepper.
9 - Preheat the pan
Place a large frying pan you have a lid for over a high heat.
10 - Form the balls
Form 400g of beef mince into 4 balls, lay the sliced onion on top of each ball, season
with salt, and drizzle over 1 tbsp of oil. Flatten the balls slightly to form pucks - we will
smash them later in the pan to form more burger-shaped Burgers!
11 - Smash
Once the pan has preheated, lay the burgers in, onion-side down. Use a spatula to
flatten them to around 0. 5cm thickness.
12 - Fry
Fry on each side for 1-2 minutes, until golden and crisp in places. Cut 2 brioche burger
buns in half while you wait.

further 1-2 minutes.
13 - Add the cheese
Once the burgers are golden and crisp in places, add a slice of American cheese onto
each. Add a splash of water to the pan, cover it with a lid and steam for around 20-30
seconds, until the cheese has melted fully.
14 - Toast the buns
Transfer the burgers to a plate and toast the burger buns cut-side down in the residual
fat for 1-2 minutes, until golden.

15 - Assemble the burgers
Liberally spread the sauce over the cut sides of the buns, then load in the burgers.
16 - Serve
Serve the burgers with the wedges, then get involved!
