750ml red wine, full-bodied
1 orange, sliced
200g muscovado sugar
2 bay leaves
2 star anise
2 cinnamon sticks
2 green cardamom
4 cloves
6 peppercorns

Makes 200ml - Takes 30 minutes
Step 1:
Place the wine, orange slices, sugar and spices into a large saucepan and place over a high heat. Bring to a rolling boil and then reduce the heat to medium to achieve a gentle boil.
Step 2:
Cook for 20 minutes until the liquid has reduced by ⅘. Strain the liquid into a glass jug and then pour in the brandy. Allow to cool to room temperature.
