Ingredients
1 ea cauliflower(s) (approx. 600g each)
30 g plain flour
3 tbsp olive oil
50 g panko breadcrumbs
250 g microwave brown rice
25 g unsalted butter
1 tsp smoked paprika
200 g tinned sweetcorn
2 tbsp honey
1 tsp chilli flakes
15 g fresh coriander
1 ea lime(s)
1 - Prep the cauliflower
Cut small, bite-sized florets from the stem of 1 cauliflower - we don't need the stem for this recipe,
but it makes great soups.
2 - Get the cauliflower ready
Tip the florets into a large bowl. Add 30g of flour, 3 tbsp of olive oil, 3 tbsp of water, and a generous
pinch of salt.
3 - Toss
Toss everything together - the cauliflower should look a bit sticky at this point.
4 - Add the panko
Toss through 50g of panko breadcrumbs and toss again, most of the panko should stick to the
cauliflower.
5 - Preheat the air fryer
Preheat the air fryer to 200°C. Get on with the rest of the dish in the next steps while it heats up.
6 - Get frying!
Once the air fryer has preheated, load in the coated florets and air fry for 12-15 minutes, until golden
and crisp. Give everything a turn halfway through to ensure an even colouring. Get on with the rest

7 - Get the rice ready
Add 1 250g packet of rice to a large mixing bowl. Chuck in 25g of butter and 1 tsp of smoked paprika.
Drain 1 200g tin of sweetcorn and tip that in too. Season with a generous pinch of salt and a good
grind of pepper, then give everything a good mix. We will cook this later.
8 - Assemble the spicy honey
Add 2 tbsp of honey and 1 tsp of chilli flakes to a large mixing bowl. Cover with cling film.
9 - Cook the spicy honey
Cook the honey in the microwave on full power for 30 seconds. Once ready, set aside and allow to
infuse with the chilli flakes.
10 - Cook the rice
Cover the rice and corn with cling film and microwave on full power for 2-3 minutes, until piping hot.

11 - Chop up the coriander
Finely chop 15g of coriander, then crack on with a bit of washing up while you wait for the cauliflower
and rice to cook.
12 - Fold
Finely grate the zest of 1 lime into the rice and squeeze in its juice. Add the coriander and fold
everything together.
13 - Toss
Once the cauliflower is ready, tip the crispy florets into the hot honey. Toss to coat.
14 - Serve
Divide the rice between plates and top with the hot honey cauliflower wings. Get involved!
