Kefir is the word on the street at the moment. Have you ever considered fermenting at home? A fascinating process with results worth the wait. It creates the most incredible breakfast smoothie that full of the good stuff for your gut.
Ingredients
1tspkefir grains
250mlwhole organic milk
150gmixed frozen berries
1tbsphoney
2tsprosewater
100-150mlcoconut water
Method
Tip the kefir grains into a large glass jar (or bowl) with the milk. Place a tea towel, muslin cloth or kitchen paper over the top of the jar and secure using an elastic band to make a breathable lid. Leave the mixture to ferment at room temperature at least overnight, preferably 24-48 hours, depending on the temperature of your room.
When enough time has passed, you'll know the milk is ready when it has thickened and tastes tangy. Strain the kefir grains from the liquid (you can reuse them straight away to make another batch or store, covered, in the fridge for a few days).
Now it's smoothie time! Throw the frozen berries, honey, rosewater and 100ml of kefir into a Blend-X Fresh blender with some of the coconut water. Blend, then add the rest of the coconut water if required to get a drinkable consistency. Serves 2.
