Recipe: Spiced Tomato Frittata

SPICED TOMATO FRITTATA

Mike wanted a protein heavy breakfast that could be a healthier alternative to a fry up... which he claims he might chose as his final meal on earth! This is what we came up with, subtly spiced egg with smoky bacon cooked inside of an edible ramekin and finished with fresh avocado. Mike is in food heaven!

Ingredients

  • 4 rashers bacon
  • 6-8 Other eggs
  • 1-2 tsp medium curry powder
  • 2 tsp turmeric
  • 4 Other beef tomatoes
  • 1 pinch sea salt
  • 2-3 tbsp ghee
  • 1 Other avocado
  • 1 small bunch fresh coriander
Preheat the oven

Preheat the oven to 180ºc

Dice bacon

Dice Bacon

Dice the bacon.

Whisk the eggs

Whisk The Eggs

Crack the eggs into a bowl, add in the spices and whisk them up. Add the diced bacon to the eggs.

Hollow the tomatoes

Hollow The Tomatoes

Slice the top off the tomatoes and hollow it out with a spoon, saving the inside for another recipe such as tomato sauce.

Pour the egg mixture

Pour The Egg Mixture

Pour the egg mixture into the tomatoes and season the top with a little sea salt.

Spoon the ghee

Spoon a little ghee over the top of the eggs.

Bake for 25 mins

Place the filled tomatoes into a baking dish and bake in the oven for 25 minutes.

Dice the avocado

Dice The Avocado

Peel and dice the avocado and chop the coriander.

Remove from the oven

Remove From The Oven

Remove the tomatoes from the oven. Top with diced avocado and season again with salt, pepper and another drizzle of ghee.

Serve pretty immediately. Serves 2-4 (depending on goals)
