Recipe: Tofu Scramble


If you were blindfolded, you probably wouldn't be able to tell the difference between this tofu and scrambled eggs! We've added some great curry flavours in this recipe to take tofu to the next level. And the best thing? It's all served on classic avo on raisin toast. A breakfast of kings.


  • 2 tsp turmeric
  • 1 tbsp curry powder
  • 1 tbsp ghee
  • 350 g firm silken tofu
  • 2 tbsp natural yoghurt
  • 2 sprigs fresh coriander
  • 1 avocado
  • 1 squeeze lime juice
  • 2 tbsp extra virgin olive oil
  • 2 slices seeded raisin bread
  • 1 fresh red chilli
Cook the Tofu

Cook The Tofu

Add the ghee to a small non stick frying pan. Let it melt and begin to bubble, then stir in the turmeric and curry powder. Let the spices toast for a minute before adding the block of tofu. Use a spoon or spatula to break it up and coat all the pieces in the spiced butter. Only cook for a few minutes to heat the tofu through.

Add the Yoghurt

Stir through the yoghurt then chop the coriander and add that too. Season well with salt and pepper.

De-stone the avocado and scoop out the flesh. Tip it into a small mixing bowl and mash with the lime juice and olive oil. Toast the bread then spread over the avocado. Top with the creamy scrambled tofu.

Serve up!

Slice the chilli and use it to garnish with a few extra sprigs of coriander. Serves 2
