Recipe: Toasted Cereal Caramel Sundae


This little dish of awesomeness will take your evening snacking to the next level - layers of toasted Rice Krispies mixed with honey and almond butter, honeyed yogurt and caramel sauce. Yeah… See what we mean?


For The Cereal Bites

  • 1 tbsp almond butter
  • 1 tbsp honey
  • 150 g rice krispies

For The Sundae

  • 400 g greek yoghurt
  • 1 tbsp honey
  • 3 tbsp caramel sauce
  • 4 tbsp pistachio nuts, chopped

Preheat the oven to 170ºC

Melt the almond butter and the honey in the microwave for 30 seconds, stir to combine then add the Rice Krispies. Stir and spread the mix onto a baking tray lined with greaseproof paper. Bake for 5 minutes then leave to cool for 10 minutes.

Make the Yoghurt Mix

Meanwhile stir another 1 tbsp of honey into the yoghurt and put the mixture in the freezer until the Rice Krispies have baked and cooled. When the Rice Krispies have cooled start layering them into small glasses, followed by the caramel sauce, the pistachio nuts and the yoghurt. Continue layering until you reach the top with a yoghurt layer.


Step 4


Scatter over a few extra Rice Krispies and nuts then serve. Makes 4 sundaes
