Recipe: Tim Tams


All hail Tim Tams. These biscuits are a staple in Australia & New Zealand so we knew we had to make them. If you're not familiar with them, they're very similar to penguins! So if you like chocolate with a crunch, you should probably get baking.


For The Biscuits

  • 225 g salted butter, softened
  • 200 g caster sugar
  • 2 egg yolks
  • 1/2 tsp vanilla extract
  • 300 g self-raising flour
  • 6 tbsp cocoa powder

For The Filling

  • 100 g butter
  • 100 g icing sugar
  • 1 tbsp cocoa powder
  • 1 tbsp horlicks

For The Coating

  • 400 g milk chocolate
Make the Cookie Dough

Step 1

Beat the softened butter and sugar for the vanilla cookies together until pale and fluffy. Crack in the egg yolks and vanilla extract, beating together. Sieve the cocoa powder into the flour and fold in the mix until fully combined.

Roll the Cookie Dough

Roll the cookie dough out between sheets of baking paper to the thickness of about 3mm and the size of roughly an A4 sheet. Slice into long narrow rectangles (about 10cmx2cm but they can be as big as you like) and transfer to a lined baking tray. Chill in the fridge for an hour or so to set up.

Bake the Cookies

Bake The Cookies

Preheat an oven to 170ºC. Bake for 15 minutes then leave them to cool on a wire rack.

Add the Buttercream

Add The Buttercream

Cream the butter and fold in the icing sugar, cocoa powder and horlicks. Spread the buttercream over the cooled biscuits and use a butter knife to smooth the edges. Sandwich the buttercream with a second biscuit on top and chill them for an hour.

Coat in Chocolate

Coat In Chocolate

Melt the milk chocolate in the microwave, heating for 30 seconds at a time until just melted and smooth. Dip the bottoms of the biscuits in the chocolate, then put a tray underneath a wire rack and place the biscuits back onto the wire rack. Pour the milk chocolate generously over the biscuits so that it covers the top and the sides.

Eat the Biscuits!

Leave the biscuits in the fridge to set and keep them to serve! They’ll last for up to a week. Makes 12 biscuits
