Recipe: Thyme And Clementine Champagne


It's always handy to have a festive champagne cocktail recipe to hand. This one makes the most out of three very simple yet complimenting flavours: Thyme, clementine and pomegranate. Check out our other two original champagne cocktail ideas!


  • 50 g caster sugar
  • 50 g Water
  • 4 sprigs thyme
  • 3 clementines
  • 2 tbsp pomegranate
  • 600 ml champagne
Make the Sugar Syrup

Step 1

Make The Sugar Syrup

Tip the sugar and the water into a small saucepan. Add 2 sprigs of thyme and squeeze in the juice of 2 clementines through a fine sieve. Bring the mixture to a boil and let it bubble for 2 minutes. Cool the sugar syrup to room temperature.

Pour 2 tbsp of the syrup into each chilled tall champagne glass. Add a few pomegranate seeds, a few extra thyme sprigs and a couple of clementine segments to each glass then pour over 150ml chilled champagne into each glass Serves 4
