Recipe: Thai Noodle Soup In A Mug


Cooking and eating alone can often lead to:- a) Lack of enthusiasm/effort b) Cooking or wasting too much c) Resorting to ready meals or takeaways! Until now! This Thai pot noodle is deliciously quick, simple and tasty! Packed with flavours that sit in the cupboard, fridge or freezer for a week or two until you need them and cooked in a microwave in well under 5 minutes what's not to like? Actually, what's not to love?


  • 2-3 sprigs fresh coriander, chopped
  • 1 clove garlic
  • 1 dollop red chilli paste
  • 1 tiny knob ginger
  • 1 lime
  • 75 g straight to wok rice noodles
  • 80 ml coconut milk
  • 100 ml water
  • 1 tsp soy sauce
  • 1/2 tsp fish sauce
  • 1 handful frozen soy beans
  • 5 frozen raw king prawns
grate the garlic and ginger

Grate The Garlic And Ginger

Grate the peeled garlic and ginger into the mug.

Splash In The Coconut Milk

Zest in half the lime with the chilli paste. Splash in the coconut milk and water.

add the soy and fish sauce

Add The Soy And Fish Sauce

Stir in the soy sauce and fish sauce.


Step 4


Place the noodles, beans and prawns into the broth and stir. Heat on full power (800watts) for 3.5 minutes.

Chop the coriander and stir through the broth, serving with a wedge of lime. Serves 1
