Recipe: Stained Glass Cookies
Here's a treat for you... Jamie starts to decorate the studio and Ben bakes up a few cookies to hang on the tree. What could possibly go wrong!?!
- 175 g plain flour
- 1 tsp ground ginger
- 1 lemon, zested
- 100 g cold, diced butter
- 50 g vanilla caster sugar
- 1 tbsp milk
- 1 handful of boiled fruity sweets
- 2 tbsp poppy seeds
Preheat An Oven
Preheat an oven to 180 degree C.
Make The Cookie Dough
Blitz the flour, ginger and cold, diced butter together in a food processor.
Zest in the lemon, tip in the sugar, poppy seeds and pour in the milk.
Stir it all together and tip into a large bowl or onto a clean work surface.
Knead together for a few seconds until it just comes together into one dough then chill in the fridge for an hour (covered).
Roll And Cut
Roll out on a floured surface to 1/2 cm thick and cut out your desired cookie shapes.
Cut another shape out of the centre of each cookie and transfer the cookies to a lined baking tray.
Add The Candy And Bake
Chop up some boiled fruit sweets with a knife or by bashing them with a rolling pin whilst still in their wrappers. (Try to keep the different colours separate.)
Sprinkle the chopped sweets into the hole in the centre of the cookies and bake them for 10 minutes.
Cool, Ice And Hang
Leave to cool until completely cold before removing them from the lined baking tray.
Ice them however you wish and thread a ribbon through the hole to hang your decorations.
