Recipe: Chorizo Chickpea Cassoulet


This is a brilliant dish that can be cooked up in no time at all. It's a hearty and filling meal that doesn't cost the earth. Treat yourself to some good quality sausages though... it'll still be a much cheaper meal than a prime cut of meat.


  • 1 shallot
  • 1 shot olive oil
  • 2 sticks celery
  • 150 g chorizo
  • 1 glass white wine
  • 1 tin tomatoes
  • 1 tin chickpeas
  • 4 hefty pork sausages
  • 1 handful fresh parsley
Preheat the grill

Preheat the grill to a medium heat.

Start cooking the shallot

Peel and roughly chop the shallot and start to fry in a large frying pan with a shot of oil to soften.

Grill the sausages

Prick the sausages to stop them bursting as they cook and line them up on a baking tray. Grill them for 10-15 minutes, turning occasionally until they are golden all over.

Add the celery

Wash and chop the celery and add to the pan with the shallot, frying for 2 minutes.

Bubble away the wine

Cube the chorizo and toss in with the onion and celery to cook for 2 minutes. Splash in the wine and allow to bubble.

Add chickpeas & simmer

Open and drain the chickpeas, before adding to the pan with the tinned tomatoes. Stir and simmer the sauce until the sausages are cooked.

Season and serve

Chop the fresh parsley and mix into the cassoulet with salt and pepper to season. Serve the sausages on a generous mound on the chickpea and chorizo cassoulet. Serves 2
