Recipe: Welsh Rarebit


We'd argue that rarebit is the most famous Welsh recipe of them all! If you like cheese on toast then this a recipe you'll fall completely in love with. First you need to make up your buttery, cheesy sauce that's spiked with mustard, beer and worcester sauce. Then you need to spread that over hunks of sourdough with some red onion chutney. Grill to perfection and eat it with your mouth.


  • 50 g flour
  • 50 g butter
  • 200 ml beer
  • 200 g strong cheddar cheese, grated
  • 50 g blue cheese
  • 2 tsp english mustard
  • 50 g creme fraiche
  • 2 tbsp worcestershire sauce
  • 1 egg yolk
  • 4 thick slices sourdough bread
  • 2 tbsp red onion chutney
  • 1 handful watercress

Preheat the grill to high.

Throw the butter into a medium saucepan over a medium-high heat. Let the butter melt and begin to bubble. Stir in the flour and combine to create a paste. Cook for a minute while stirring. Slowly add the beer, combining fully each time before adding more, until you have a smooth, thick sauce.

Add the cheese and let it fully melt into the sauce. Take the sauce off the heat and stir in the mustard, creme fraiche and Worcestershire sauce. Let the sauce sit for 10 minutes then stir in the egg yolk.


Step 4


Grill one side of each slice of bread and spread the chutney over the un-toasted side. Now spread over the cheese sauce, add a little extra Worcestershire sauce over the top and put it under the grill for 5 minutes (but keep an eye on it!).

Once the rarebit is golden brown and bubbling take it out and put it on a plate. Top with a few leaves of watercress and serve! Serves 4
