Posh Beans On Toast
These aren't your average beans on toast. While opening a tin of baked beans is the easiest lunch ever, when you have a bit of left over tomato sauce we think it's worth putting in a little extra effort to make your own extra special baked beans on toast complete with juicy sausages.
- 1 tsp dried mixed herbs
- 1 splash Worcestershire sauce
- 4 slices brown granary bread
- 2 handfuls spinach
- 1 handful Parmesan
- 1 glug oil
- 4 sausages
- 400 g cannellini beans
- 250 ml tomato sauce / passata
Fry The Sausages
Heat the oil in a frying pan and add the sausages to fry until brown all over.
Cook The Sausages & Beans
Chuck in the beans, mixed herbs, tomato sauce and Worcestershire sauce.
Simmer the mixture for 10 minutes, until the sauce has reduced and the sausages are fully cooked.
Toast The Bread
Toast the bread in a toast or under the grill.
Chuck In The Spinach
Stir the spinach into the beans just before serving and allow it to wilt slightly.
Finish And Serve!
Split the sausage and beans between the toast and scatter over the Parmesan cheese.
