Palmiers are a delicate, savoury French pastry that make the ideal snack at any party table. Their distinct shape is easy to achieve if you carefully follow this awesome step-by-step recipe. Keep your eye on them in the oven though, they have a tendency to burn! You want to achieve the perfect golden brown colouring.
- 1 sheet puff pastry
- 50 g parmesan
- 2 tbsp dried cranberries
- 1 tbsp fresh sage
- 1 tbsp fresh thyme
Assemble The Palmiers
Roughly chop the cranberries.
Scatter over the parmesan, cranberries and the herbs.
Roll the two longest edges in towards each other, keeping a tight spiral until they almost meet in the middle.
Use greaseproof paper (or the wrapping that the pastry came in) to gently squeeze the rolls tight.
Freeze for 20 minutes, or keep the dough in the fridge for at least a few hours, until you need it. You want the dough to be nice and cold before slicing.
Bake And Serve
Slice across the rolled dough into 0.5cm slices and lay the slices onto a baking tray lined with greaseproof paper.
Preheat the oven to 190ºC.
Bake for 10-15 minutes until golden brown and crisp.
