Recipe: Barry's Double Chocolate Chip Panettone Muffins


Christmas has come early with these Panettone muffins. We twist the classic here by adding a bunch of chocolate!! Make these any time of the year, they're packed fulla dried fruit and nuts and an absolute treat.


For The Muffins

  • 340 g plain flour
  • 2 tbsp cocoa powder
  • 3 tsp baking powder
  • 1 tsp mixed spice
  • 1 pinch salt
  • 200 g caster sugar
  • 240 ml buttermilk
  • 120 ml sunflower oil
  • 1 tsp vanilla extract
  • 1 lemon
  • 1 orange
  • 75 g dark chocolate chips
  • 25 g dried apricots
  • 25 g dried cherries
  • 25 g raisins
  • 25 g dried cranberries
  • 50 g dermarera sugar
  • 50 g flaked almonds
  • 100 ml golden rum

Step 1

Preheat The Oven

Preheat the oven to 220ºC. Sit large muffin cases into a muffin tray in preparation for the mixture.

Step 2

Combine The Ingredients

Weigh the flour, cocoa powder, baking powder, mixed spice, salt and caster sugar into a bowl, then stir to combine. Whisk the eggs, buttermilk, oil and vanilla extract in a second bowl. Zest the orange and lemon into the wet mix. Pour the wet stuff into the dry stuff, then mix gently until fully combined, taking care not to overwork the mixture. Roughly chop all of the dried fruits and add them to the mix with the chocolate chips. Fold until the fruit and chocolate is incorporated.

Step 3

Bake The Muffins

Divide the mixture between the muffin cases, making sure they are filled ¾ of the way up. Sprinkle with the demerara sugar and flaked almonds. Place them into the oven and immediately turn it down to 180ºC. Bake for 25 minutes, until risen, golden and if you poke a clean skewer into the muffin it comes out clean too.

Step 4

Soak The Muffins

Combine the sugar syrup with the rum and use a skewer to poke lots of little hole in the tops of the muffins. Divide the rum syrup between the muffins, brushing it over the tops and into the holes. Allow to cool in the muffin tins for 10 minutes before lifting onto a wire rack to cool completely.

Step 5

Serve The Muffins

Scatter over a little extra orange zest and serve.
