Recipe: Mississippi Mud Pie

Holy chocolate cake how have we never made this before? A Mississippi mud pie is probably the ultimate chocolate recipe. Everyone in the SORTEDfood crew agreed that everyone should try this at least once in their life.
Ingredients
The Base
- 250 g oreos
- 75 g salted butter
The Cake
- 120 g dark chocolate
- 80 g salted butter
- 4 eggs
- 160 g light brown sugar
- 120 ml double cream
- 50 ml strong cold coffee
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
The Pudding
- 250 ml whole milk
- 100 g dark chocolate
- 2 tbsp cocoa powder
- 1 tbsp cornflour
- 1 tbsp honey
- 25 ml coffee liqueur
The Cream Top
- 250 ml double cream
- 2 tbsp caramel sauce
- 25 g dark chocolate
- 1 drizzle chocolate sauce

Step 1
Make The Base
Blitz biscuits and mix with the melted butter. Press into a spring form or loose-bottomed 23cm cake tin. Chill.

Step 2
Preheat The Oven
Preheat an oven to 180°C.

Step 3
Make The Cake
Melt the chocolate and butter in a bowl over a pan of simmering water. Whisk the eggs and sugar in a second bowl until they have tripled in volume. Mix the coffee, vanilla and cream together.

Step 4
Cook The Cake
Fold the coffee cream into the eggs along with the chocolate mixture and cocoa powder. Transfer onto the biscuit base. Bake for 35mins at 180°C then cool completely.

Step 5
Make The Pudding
Warm all the ingredients for the pudding slowly in a saucepan as you whisk. Transfer to a bowl to cool once it's thickened and bubbled for a minute.

Step 6
Assemble And Serve
Pour onto the cooling mud pie. Whip up the cream, fold in the caramel and spoon on top. Finish with grated chocolate and a drizzle of chocolate sauce! Serves 12
