Microwave Fish Pie
This delicious microwave fish pie recipe is here to answer all your comfort food dreams. It's a classic take that ticks all the boxes. After some extensive testing we've decided we need to cook with microwaves more.
For The Potatoes
- 400 g white potatoes
- 75 ml whole milk
- 1 tbsp butter
- 1 tsp lemon zest
- 1 tsp toasted fennel seeds
For The Filling
- 1 tbsp butter
- 1/4 medium leek
- 1/2 clove garlic
- 75 ml white wine
- 150 g mixed fish
- 100 ml double cream
- 1 tsp dijon mustard
- 1 tbsp chopped chives
For The Toppings
- 25 g cheddar
- 15 g almond flakes
- 10 g pine nuts
Make The Mash
Microwave the potatoes in a bowl, on full power for 10 minutes, until they’re soft all the way through.
Carefully scrape the flesh out of the skins and into the bowl. Add the milk and butter and mash well.
Zest in the lemon and add the fennel seeds and stir but don’t overwork it!
Make The Filling
Wash the leek and cut it into quarters lengthways then slice. Peel and mince the garlic.
Add the butter, wine, sliced leek and garlic to an small microwavable ramekin or a mug.
Microwave on high for 5 minutes.
Finish And Serve
Add the fish, mustard, double cream and parsley to the dish and stir.
Carefully layer the potato on top of the fish and top with the cheese, almond flakes and pine nuts.
Microwave for another 10 minutes, until the top is slightly brown and everything is piping hot.
Use oven gloves or a towel to remove the bowl and put it on a cold plate so that you can hold it!
