Fill The Jars
Peel the lemon into long strips.
Cut the feta block into large 2x2cm cubes and pile them into the cooled jars along with the lemon peel, chilli flakes, sumac, herbs, black peppercorns and bay leaf.
Pour over the oils (you can use 100% olive oil if you’d prefer, but it may go cloudy in the fridge and spoil the aesthetic).
Makes 1 large jar
