Recipe: Marinated Cheese


Out of ideas for homemade holiday gifts? Marinated cheese is super easy to put together and makes a really lovely Christmas present for friends and family.


  • 300 g good quality feta
  • 1 lemon
  • 1/2 tsp chilli flakes
  • 1 tsp sumac
  • 6 sprigs fresh oregano
  • 2 sprigs rosemary
  • 1 tsp black peppercorns
  • 1 bay leaf
  • 100 ml olive oil
  • 100 ml vegetable oil
  • 2 200ml jars with lids

Preheat the oven to 150ºC. Wash the jars in hot soapy water, rinse and place on a baking tray. Put them in the oven to dry and sterilise. Let the jars cool.

Peel the lemon into long strips. Cut the feta block into large 2x2cm cubes and pile them into the cooled jars along with the lemon peel, chilli flakes, sumac, herbs, black peppercorns and bay leaf. Pour over the oils (you can use 100% olive oil if you’d prefer, but it may go cloudy in the fridge and spoil the aesthetic). Makes 1 large jar
