Recipe: Lomo Saltado

LOMO SALTADO

Have you heard of Chifa before? It's what you call the amazing blend of Peruvian and Chinese cuisines that create dishes like this Lomo Saltado! The flavours that go into this beef stir fry are unbelievable. But the best bit? It's served with rice AND french fries. MEGA.

Ingredients

  • 250 g lean beef (or alpaca)
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1 red onion
  • 2 tbsp pisco
  • 2 tbsp red wine vinegar
  • 3 tbsp soy sauce
  • 2 small tomatoes
  • 2 spring onions
  • 1 bunch fresh coriander
  • 1 bowl lime flavoured rice to serve
  • 1 bowl french fries to serve
Prepare the Beef

Cut the beef into bite-sized pieces and season with a little salt and plenty of black pepper.

Peel and cut the onion into wedges and break apart into 2cm pieces. Peel, deseed and cut the peppers into pieces the same size. Quarter and deseed the tomatoes and cut into slices across the petals. Wash and slice the green tops of the spring onions into 2cm pieces and the white tips finer.

Preheat a wok on the hob. Add the veg oil and wait until it's smoking hot. Lower the beef into the wok carefully and flash fry for 1-2 minutes, stirring occasionally, to get some colour on the meat. Toss in the onion and pepper and continue to cook for a couple of minutes to slightly soften, aiming to char the edges.

Deglaze the pan with the Pisco, then add the red wine vinegar and soy sauce. Finish with the prepared tomato and spring onion and cook for a minute to warm through, but don't over cook the tomato.

Serve with rice and/or fries and with plenty of chopped coriander stirred through. Serves 2
