Recipe: Ham, Goats Cheese & Pea Linguine Frittata

The perfect summer dish that's so creamy, versatile and packed full of fresh herbs and delicious ingredients. Have it hot for lunch or dinner? Cool it down and serve at a BBQ or take it on a picnic! It's a simple recipe so get stuck in.
Ingredients
- 200 g cooked linguine
- 100 g ham
- 50 g leeks
- 100 g peas
- 2 sprigs mint
- 2 sprigs basil
- 1 tbsp lemon zest
- 12 eggs
- 200 ml double cream
- 6 slices firm goats cheese
- 1 tbsp butter
To Serve
- 2 sprigs mint
- 2 sprigs basil

Step 1
Preheat The Oven
Preheat the oven to 190ºC.

Step 2
Combine The Fillings
Slice the leek and add it to an ovenproof dish with the linguine, ham, peas, herbs and lemon zest. Toss everything together.

Step 3
Add The Egg Mix
In a mixing bowl, whisk together the eggs and cream into a smooth mixture. Season well with salt and pepper and pour it over the fillings in dish. Stir a little to make sure everything is well distributed.

Step 4
Add Cheese And Bake
Slice the goat’s cheese into thin discs and place them over the top of the egg mix. Scatter over little pinches of butter all over the top. Bake for 35 minutes, until the egg is fluffy and the cheese on top is golden.

Step 5
Serve Or Chill!
Serve warm with extra herbs or chill and have it on the go! Serves 4
