Recipe: Level Up Tomato Sauce


Every good chef needs a tremendous tomato sauce recipe up their sleeve. This one will get you going! It's simple yes, but terribly effective. The flavours of the tomato are released like an explosion with the easiest tricks... Level up your tomato sauce today!


  • 1 large onion
  • 2 tbsp olive oil
  • 1 clove garlic
  • 175 ml white wine
  • 400 g chopped tomatoes
  • 1 tsp white wine vinegar
  • 1 tsp caster sugar

Peel and dice the onion. Heat a small pan over a medium heat. Add the olive oil and the onions. Turn the heat down and put a lid on the saucepan. Fry gently for a 2 minutes. Peel and mince a clove of garlic and add that to the pan. Cook for another 5-10 minutes, until the onions are soft and jammy.

Turn the up up to high for a minute, then add the wine and reduce until it’s almost bubbled away. Add the chopped tomatoes to the pan, bring everything up to a boil and simmer gently for 15-20 minutes, until you get a saucy consistency.

Finish by adding a dash of vinegar and a pinch of sugar. Season well with salt and pepper. Serve with pasta or use it for something else! Makes 4 portions
