Recipe: Hotdogs


These Hot Dogs are the perfect movie night snack. The crispy fried onions and charred chili take it to another level. Incredibly easy and totally delicious!


For The Crispy Onions

  • 1 red onion
  • 250 ml buttermilk
  • 200 g plain flour
  • 1 tsp cayenne pepper
  • 1 tbsp paprika
  • 1 tbsp cajun seasoning

To Make The Hotdogs

  • 2 good quality, thick hotdogs
  • 2 fresh chillies
  • 2 brioche hotdog buns
  • 1 romaine lettuce
  • 4 slices american cheese
  • 1 tbsp chopped gherkin
  • 1 tbsp mayonnaise
  • 1 tbsp american mustard
  • 1 tbsp ketchup
Marinate the Onions

Marinate The Onions

Peel and finely slice the onions. Pour the buttermilk into a large mixing bowl and add the onion slices. Marinate for 2 or more hours.

Get a griddle pan really hot. Griddle the hotdogs and chillies until they have plenty of deep golden brown and some black colour on them.

Cook the Onions

Preheat a fryer or a pan of oil to 180ºC. Only fill half way or in the safe range and never leave it unattended. Season the plain flour for the onions with the cayenne, paprika and cajun seasoning. Drain the onions, letting any excess buttermilk drip away. Toss them in the seasoned flour. Carefully drop the onions into the hot oil and fry for 2-3 minutes, until golden and crisp.

Grill the Buns

Preheat a grill to high. Slice the buns open and place them on a grill tray. Grill until just starting to turn golden, then add the lettuce leave and the cheese over the top. Grill for another few minutes until the cheese it melting.

Assemble the Dogs!

Place the hot dogs into the buns. Slice the charred chillies and scatter those, the gherkin and the crisp onions over the hot dog. Squeeze over the mayo, mustard and ketchup and serve. Makes 2
