Recipe: Horchata Shake

We'd never even heard about this until it was shared with us. It's a delicious milkshake/smoothie from Mexico that includes making your own rice milk... the original recipe from Pigadimar on sortedfood.
Ingredients
- 90 g almond flakes
- 200 g raw fragrant rice
- 800 ml water
- 1 cinnamon stick
- 450 ml milk powder
- 1 tbsp condensed milk
- 1 tbsp honey
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1 pinch of salt
- 100 ml double cream

Step 1
Make A Rice And Almond Milk
Pour the rice, almond flakes and water into a large bowl. Chuck in the cinnamon stick and keep in the fridge for 8-12 hours. Remove the mixture from the fridge and blend until as smooth as possible.

Step 2
Strain The Milk
Strain the mixture through a piece of muslin cloth, or a very fine sieve.

Step 3
Freeze The Milk In Cubes
Pour the strained milk into ice cube trays and freeze.

Step 4
Blitz Up The Drink
In a blender, combine the ice cubes with the regular milk, condensed milk, honey, vanilla extract, cinnamon and salt. Blend until smooth, with a drinking consistency.

Step 5
Decorate To Serve
Whisk the double cream in a bowl until it reaches soft peaks. Transfer to a piping bag with a star nozzle. Pipe the whipped cream over the top of the drink and drizzle with caramel sauce.
