Recipe: Gingerbread Groot Beer Float

GINGERBREAD GROOT BEER FLOAT

Guardians of the Galaxy fans will love this baby groot beer float! This recipe will teach you how to make delicious gingerbread that packs a sweet punch. It's all super easy to make and a load of fun.

Ingredients

For The Ginger Bread

  • 500 g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/4 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp cinnamon powder
  • 1/2 tsp ground clove
  • 1/2 tsp salt
  • 100 g unsalted butter, room temperature
  • 100 g soft dark brown sugar
  • 2 large eggs
  • 100 g black treacle
  • 75 g golden syrup
  • 20 g black icing

For The Drinks

  • 1 l root beer
  • 4 scoops vanilla ice cream
  • 4 tbsp green sprinkles

Tip all of the dry ingredients, including the spices and salt, into a mixing bowl and combine well. Tip the butter and the sugar into another mixing bowl (or a stand mixer) and beat until light and fluffy. Add the eggs one at a time, then the treacle and finally stir in the flour mixture to get a stiff dough. Divide the dough into 2 pieces, flatten a bit into discs and wrap in clingfilm. Chill in the freezer for a few hours, until really cold.

Preheat an oven to 180ºC. Lightly flour a work surface, tear the gingerbread into balls big enough to roll into a single Groot. Keep the rest in the freezer until needed. Roll out the gingerbread into 0.5cm sheet. Cut out your Groot shapes, use a butter knife to create indented features and transfer to a baking tray lined with greaseproof paper. Bake for 10 minutes, until crisp, then set aside to cool. Decorate your cookies with the icing to get Groot’s eyes and leave to set while you make your drinks.

To make the drinks, pour the root beer into glasses and float the ice cream on top. Stick a biscuit into the ice cream in each glass, scatter over the sprinkles and serve straight away! Makes 4 drinks + extra gingerbread.
