- 3 tbsp caster sugar
- 50 g chopped toasted hazelnuts
- 1 shot brandy
- 1 shot port
- 140 g plain flour
- 30 g beaten eggs
- 70 ml water
- 1 tsp butter, melted (+ a bit extra)
- 1 handful icing sugar
Prepare The Figs
Slice 4 of the figs into eighths and chuck them into a bowl with the blackberries.
Toss the fruit with the sugar, half of the hazelnuts, brandy and port. Set aside for an hour.
Preheat The Oven
Preheat the oven to 200ºC.
Grease a baking tray and stick it in the oven to heat up.
Make The Pastry
Combine the flour, eggs, water and butter into a sticky dough.
Work the dough on a clean surface until it becomes smooth and doesn't stick.
roll the pastry as thinly as possible.
Stretch the pastry until it is almost see-through.
Fill And Roll
Brush the melted butter over the pastry and sprinkle over the demerara sugar.
Spoon the fruit filling in a line down one side of the pastry.
Roll the pastry up around the filling and carefully transfer it to the hot baking tray.
Finish And Serve
Transfer to your serving platter and dust with icing sugar.
Serve the strudel with a generous helping of whipped cream or crème fraîche and the remaining 2 figs sliced on the side.
