Epic Pizza Grilled Cheese
The fusion of two of Barry's favourite foods... a grilled cheese and a pizza. We know you'll live this!
- 1 tbsp olive oil
- 1 clove of garlic
- 100 ml red wine
- 400 g tinned tomatoes
- 100 g mozzarella, grated
- 1 ball of buffalo mozzarella
- 1 sprig of fresh basil
- 50 g wild boar sausage
- 1 tbsp butter
Dice your garlic and fry off in a pan with oil.
Once soft add the tomatoes and wine, then bring to a simmer and cook for 10mins.
Season with a pinch of salt and pepper before leaving to cool.
Slice two pieces of chunky bread.
Spread your cooled sauce on both slices. Then cover one slice with your grated mozzarella, buff mozzarella, fresh basil, sliced sausage and then some more grated mozz!
Add the second slice of bread on top and brush butter on the outside.
Flip your sandwich onto a hot pan and butter the outside of the other slice.
Apply pressure to the sandwich as you grill for 2-3 minutes.
Once the base is browned flip it and repeat.
