Recipe: Cookie Recipe Hack

We're concerned about giving you this one... it's the crown jewels of cookie recipes! Once you have this one, you may never need a cookie recipe again. It's based around a very simple ratio - 1:2:3. 1 part sugar : 2 parts fat : 3 parts flour (then by all means add in a few flavours that you like that don't affect those ingredients)
Ingredients
White Chocolate & Cherry Cookies
- 100 g caster sugar
- 200 g salted butter
- 300 g self-raising flour
- 1/2 tsp vanilla extract
- 100 g white chocolate chips
- 100 g glacé cherries
Coffee & Almond Cookies
- 50 g soft brown sugar
- 50 g dark brown sugar
- 100 g salted butter
- 100 ml vegetable oil
- 225 g self-raising flour
- 75 g ground almonds
- 1 tbsp coffee essence
- 1 drop of vanilla extract
- 1 pinch of salt
Oaty Honey Cookies
- 50 g vanilla caster sugar
- 50 g honey
- 200 g salted butter
- 1 egg
- 300 g plain flour
- 1 tsp baking powder
- 50 g porridge oats
- 50 g chopped walnuts
- 1 lemon
- 2 tbsp poppy seeds

Step 1
1:2:3 Ratio - Method
The ingredients are added in the same order as the ratio... Beat the sugar(s) and fat(s) until light and fluffy and the sugar has been well incorporated.

Step 2
Dry Stuff
Add in any additional wet ingredients such as vanilla or egg. Stir in the flour(s), followed by any dry flavour ingredients.

Step 3
Shape
Shape immediately onto lined baking trays or chill to roll the dough out... - the white choc cookies we did as 60-70g discs 1cm thick, - the coffee cookies as golf-ball sized blobs dropped and - the oat cookies as 60-70g discs 1 cm thick.

Step 4
Bake
Bake in a preheated oven at 180 degrees C for 12 minutes. Allow to cool and decorate as you like, then serve.
