Recipe: Baked Coconut Cake


This is one of the simplest, yet most satisfying, coconut puddings ever. Inspired by SORTEDfood Brasil! So simple in fact, that Barry insisted he could do it blindfolded! (So please excuse the mess!)


  • 3 eggs
  • 3 tbsp butter, softened
  • 200 g desiccated coconut
  • 398 g condensed milk (1 tin)
  • 240 ml milk

Crack the eggs into a mixing bowl and whisk together with the milk and softened butter. Then whisk in the desiccated coconut.

Sweeten with condensed milk

Whisk in an entire tin of condensed milk.

Transfer to a baking dish

Pour the contents into an ovenproof baking dish.


Step 4


Bake the cake at 180 degrees C for 40 minutes, until golden on top and set right through. Test with a clean skewer or fork... it should come out clean.
