Level Up Chocolate Fudge Sauce
The richest most indulgent chocolate sauce ever ever ever. It's a foolproof recipe that you need to keep stored at all times to take any bowl of ice cream to the next level. There are some ingredients you won't expect but please trust us. Would we ever let you down?
For The Red Wine Syrup
- 200 ml red wine
- 2 tbsp caster sugar
- 2 star anise
For The Fudge Sauce
- 30 g unsalted butter
- 150 ml double cream
- 170 g golden syrup
- 50 g soft dark brown sugar
- 20 g cocoa powder
- 1/4 tsp salt
- 170 g dark chocolate, finely chopped
- 1 vanilla pod
Reduce The Wine
Pour the wine into a small saucepan and add the sugar and star anise.
Put the pan over a high heat and stir until the sugar dissolves, then bring to a boil and bubble for 10 minutes, until the wine thickens to a syrup.
Make The Chocolate Sauce
Tip the butter, cream, golden syrup, sugar and cocoa powder into a medium saucepan. Bring to a simmer and allow everything to combine. Add a little salt and stir in the chocolate. Scrape the vanilla from the pod and into the chocolate sauce.
Finish by pouring in the red wine syrup and season to taste with a little more salt if necessary.
Serve up over ice cream, or any dessert you like!
