Recipe: Cornbread


This is the perfect thing to go with Jamie's Chilli Con Carne. It's a little bit different and fancier than rice but it can just as easily be


  • 1 brown onion
  • 2 cloves garlic
  • 15 g unsalted butter
  • 330 g cornmeal
  • 100 g plain flour
  • 1 tsp baking powder
  • 4 eggs
  • 250 ml whole milk
  • 250 g tinned sweetcorn
Fry the Onions and Garlic

Fry The Onions And Garlic

Preheat the oven to 200ºC. Peel and finely slice the onion and peel and mince the garlic. Add the butter to to a medium saucepan over a medium heat and fry gently for 10 minutes, stirring regularly.

To a mixing bowl add the cornmeal, flour and baking powder. Season well. Crack in the eggs and pour in the milk. Whisk everything together to form a smooth batter, then add the cooked onions and garlic with the sweetcorn and fold them through the batter.


Step 3


Grease a 20x30cm baking tin and line the bottom with greaseproof paper that reaches up and over the sides (so its easy to lift the cornbread out). Pour in the batter and bake in the oven for 25 minutes.


Step 4


Remove the cornbread from the baking tin and leave to cool for 10 minutes before slicing and serving warm with chilli con carne. Serves 6
