Recipe: Cheese And Champagne Soup


We love a challenge and this cheese soup proves it! Lovers of fondue will celebrate over this fancy, indulgent recipe. It's a winner to serve at a dinner party or a rather posh lunch. Ingredients include brie, champagne and apple juice. Give it a try, you'll honestly love it.


  • 50 g butter
  • 1 onion
  • 2 carrots
  • 2 cloves garlic
  • 200 ml vegetable stock
  • 200 ml champagne
  • 100 ml apple juice
  • 1/2 tsp paprika
  • 250 g brie
Make the Soup Base

Peel and dice the onions, carrots and garlic. Roughly chop the cheese into small cubes. Add the butter to a large saucepan over a medium heat, followed by the onions, carrots and garlic. Cook gently for 10 minutes, until the veg is well caramelised. Add the paprika, stock, champagne and apple juice and simmer for 20 minutes.

Blend the soup then add it back into a pan and bring to a simmer. Grate the cheese into the soup and stir until it melts. There will still be a few bits.

Blitz the soup to a smooth puree, season if necessary (taste first, it can be salty). Serve! Makes 5
