Recipe: Cheat's Dosas


Dosas are a savoury breakfast pancake crammed with delicious fillings; usually potato, vegetables and cheese. As a popular street food originating from Southern India, the construction of them can be something of an art! So to help y'all out we've made a cheat's recipe. Whip up a quick pancake using chickpea flour and fill it with the gorgeous mixture yourself.


For The Dosa

  • 100 g chickpea flour
  • 100 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp fenugreek powder
  • 1 tsp turmeric
  • 1 pinch salt
  • 325 ml water

For The Filling

  • 1 white onion
  • 1 glug oil
  • 2 cloves garlic, peeled
  • 1 red chilli
  • 1 tbsp garam masala
  • 1 tsp black onion seeds
  • 2 cardamom pods
  • 1 star anise
  • 2 plum tomatoes
  • 100 ml water
  • 200 ml coconut milk
  • 200 g paneer cheese
  • 400 g chickpeas, drained
  • 1 handful spinach
  • 1 tbsp ghee

Coconut And Mint Chutney

  • 50 g desiccated coconut
  • 2 green chillies (or one if they're very hot)
  • 2 sprigs mint
  • 1 tbsp lemon juice
  • 150 g yoghurt
Make the Batter

Step 1

Make The Batter

Mix the two flours in a bowl with the bicarbonate of soda, fenugreek, turmeric and salt and slowly whisk in water to form a pancake batter.

Peel and slice the onion and fry in a hot pan with oil for a few minutes. Peel and mince the garlic and chop the chilli and add to the pan with the garam masala, black onion seeds, cardamom and star anise and cook for a few minutes. Dice the fresh tomatoes and add them to the pan with a splash of water. Simmer for 5 minutes. Add the coconut milk and bring up to a simmer. Dice the cheese into cubes and add to the pan with the chickpeas and spinach to heat through.

Pour a small amount of the pancake mix into the hot frying pan and turn the pan to spread the mix so that it thinly coats the pan. Flip the pancake over once it is cooked on one side and cook the other side.

In a mini food processor (you could also just finely chop and combine everything) blitz the coconut, chilli, mint, lemon juice and yoghurt. Season with a little salt.

Scoop a little of the curry mix onto the dosa, add chutney, fold over and enjoy. Makes 4 dosas
