Recipe: Bruschetta


If you're having an Italian meal it's hard to beat bruschetta as the best way to start it! We're not going to pretend this recipe is 100% traditional as we're using garlic bread as the base (the butter is delicious). Feel free to switch that out with ciabatta bread. Just rub it with garlic, drizzle with olive oil and grill in the same way.


  • 300 g good quality mixed tomatoes
  • 1/2 bunch basil
  • 1 small shallot
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 1 loaf garlic bread or ciabatta
  • 1 tbsp extra virgin olive oil

Step 1

Make The Tomato Mix

Cut the tomatoes into small dice. Finely dice the shallot. Add both into a bowl. Finely chop the basil and add it to the bowl. Pour in 1tbsp of olive oil and the balsamic vinegar. Toss everything together.

Grill The Bread

Heat a griddle pan until it’s very hot. Slice the bread about 1cm thick (or use garlic bread) and press it into the griddle pan. Grill for 2 minutes each side to get nice black grill marks (the black bits are tasty)!

Serve Up!

Spoon the tomato mixture onto the bread, drizzle over a little extra vinegar and oil, then serve up! Makes 10 slices
