Recipe: Brunch In A Mug

This popular Mexican breakfast or brunch idea has just been made easier and cooler... by bunging it in a mug! Ready in minutes if you cook the entire process in the microwave you'll be wondering why you haven't tried this out before!
Ingredients
- 1 chunk chorizo, chopped
- 2 spring onions
- 1 tin black beans
- 2 tomatoes, diced
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp smoked paprika
- 1 pinch salt
- 2 eggs
- 1 sprig parsely

Step 1
Preheat Oven
Preheat an oven to 200°C.

Step 2
Prep Chorizo & Spring Onion
Chop the chorizo and spring onions into small pieces.

Step 3
Prep Beans And Tomato
Drain the beans. Dice the tomato flesh, removing the middle seeds.

Step 4
Mix Together
Add all the ingredients to a bowl and mix well with the spices and salt.

Step 5
Divide And Cook
Divide between two mugs. Cook each one in a microwave for 2.5 minutes on full power at 800 watts. Remove and stir the bean mixture, making sure its hot all the way through.

Step 6
Crack An Egg Over The Top
Form a well in the centre. Crack an egg into the top of each mug, then bake for 8 minutes in the oven. (You can return to the microwave for another minute if you prefer).

Step 7
Serve
Leave to stand for a minute before sprinkling with a little fresh coriander or parsley and serving. Serves 2
