Recipe: Roast Beef Trencher

ROAST BEEF TRENCHER

You've probably never seen a roast beef sandwich quite like this! We hollow out an entire loaf of bread and layer amazing beef, roasted onions, rocket, mozzarella and tomatoes. If that doesn't get you excited then we don't know what will!

Ingredients

  • 1.5 kg topside of beef
  • 2 pinches flaked sea salt
  • 4 onions
  • 2 tsp dijon mustard
  • 1 large white bloomer
  • 2 knobs butter
  • 1 handful rocket
  • 1 red onion, sliced
  • 2 balls mozzarella, sliced
  • 2 beef tomatoes, sliced
  • 2 bags crisps, to share

Preheat The Oven

Preheat the oven to 240ºC.

Grab the beef and season it generously with the sea salt and some cracked black pepper. Peel the onions and cut them into quarters, then chuck into a roasting tray with a tiny splash of water.

Get The Beef Roasting

Place the beef on top of the onions and chuck it in the oven, turning it down to 200ºC. Roast the beef for about 40 minutes for medium, or about an hour for well done then let it rest for at least 20 minutes.

Make The Sauce

Remove the beef from the pan and stir the dijon mustard into the juices. Splash in a little more water to get a sauce consistency if needed.

Hollow Out Your Bloomer

Take your bloomer and slice it across the top to remove a lid. Tear out most of the bread, leaving just the hollowed crust. Spread the butter all over the inside of the crust.

Scatter the rocket and red onion slices over the bottom of the trencher and drizzle over a little sauce. Slice the beef and lay it over the rocket, followed by the tomatoes and mozzarella. Lay over more beef, followed by more rocket, onions and sauce.

Pack all the fillings really tightly, then replace the top of the bloomer. Wrap the whole thing up in clingfilm and leave it in the fridge for at least a few hours, or over night with a weight on top.

Serve at the table and slice it open in front of your mates and tuck in with plenty of crisps! Serves 6
