Sticky Slow-Cooker Bbq Meatballs
To be frank, the title covers this recipe in one! It's an absolute killer. All you need is ten minutes to prep the ingredients and 2 hours for it all to bubble away in the cooker. We advise serving with garlic bread, polenta or your favourite slaw.
For The Sauce
- 2 red onions
- 2 cloves garlic
- 250 ml pineapple juice
- 150 g tomato ketchup
- 1 tsp smoked paprika
- 100 g dark brown sugar
- 1 tbsp soy sauce
For The Balls
- 300 g beef mince
- 300 g pork mince
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp garlic granules
- 1 bowl fresh slaw
- 1 loaf garlic bread
Cook The Sauce
Pre-warm your slow cooker.
Peel and finely dice the onion and garlic and dump into the slow cooker bowl.
Add the other ingredients for the sauce… pineapple juice, ketchup, paprika, sugar and soy.
Heat on high to get the liquid to a gentle bubble and simmer for 2 hours.
Cook The Meatballs
Beat the two minced meats together with the salt, dried herbs and spices.
Shape into meatballs approximately 4cm across (just smaller than ping pong ball sized).
Lower these into the sauce and cook as gently as possible (turn down the slow cooker to its lowest setting) for the last hour.
You can also do this in an oven-proof pan with a lid in an oven at 140ºC if you don’t have a slow cooker.
Serve alongside fresh slaw and with your perfect garlic bread… or some creamy polenta.
