Sweet rice pudding is delicious... And we've done a few recipes before (an awesome chocolate one for example) but this version by Carol and Duca on SORTEDfood Brasil is beautifully simple and doesn't even require a stove top!

120 ml coconut milk
1 tin of condensed milk
480 ml water
185 g pudding rice
8 peanut cookies

We could get hold of the graduation paçoca, so instead crushed up peanut cookies over a generous serving in a bowl. You can eat this both hot and cold!
Cook the rice in the microwave (800 watts) for 15 minutes... Stirring every 5. By which time the rice should be plump and cooked.
Liquid And Rice
Splash the coconut milk and water into a large bowl and stir in the pudding rice.
Sweeten the mixture with the condensed milk and cook for another 4-5 minutes.
