Recipe: Reuben Sandwich And Slaw


This one takes ages... but each bit is so simple... and it's more than worth it. Just listen to the noms, ums, and ahhs around the table! A salt beef rueben with all the fillings and a purple cabbage coleslaw on the side.



  • 300 g brown sugar
  • 700 g sea salt
  • 2 tbsp black peppercorns
  • 2 tbsp coriander seeds
  • 2 cloves
  • 1 tbsp ground ginger
  • 2 bay leaves
  • 2 l water

Beef Pot

  • 1 kg beef brisket
  • 1 white onion
  • 1 stick of celery
  • 2 carrots
  • 1 leek
  • 2 cloves of garlic
  • 6 bay leaves

Russian Dressing

  • 1 tsp cider vinegar
  • 1 handful of fresh flat-leaf parsley
  • 125 g mayonnaise
  • 30 g tomato sauce
  • 1 tsp tabasco
  • 1 bunch of chives
  • 1 tbsp horseradish sauce
  • 1 tbsp Worcestershire sauce


  • 8 slices of rye bread
  • 8 slices of Swiss cheese
  • 250 g sauerkraut
  • 1 knob of butter
  • dill pickles (to serve)


  • 1/4 small red cabbage
  • 1/4 white cabbage
  • 2 red apples
  • 1 carrot
  • 1 lemon
  • 2 tbsp mayonnaise
Make the brine

Step 1

Make The Brine

Put all the ingredients for the brine except for the beef into a saucepan and bring to the boil to simmer for a few minutes, then leave to cool.

Salt the beef

Place the beef and the cooled liquid into a water-tight container, make sure the beef is fully submerged and leave in the fridge to soak for at least 2 days… ideally up to a week.

Rinse the beef and cook

Rinse the beef in clean, cold water. Place the beef, chopped vegetables, herbs and spices into a saucepan and fill with water until the beef is covered. Simmer gently for about 4 hours until the beef is tender. Drain, leave to cool for 30 minutes then slice.

Mix the dressing

Combine all ingredients for the dressing in a bowl and chill.

Combine the grated apple, carrot, shredded cabbage and lemon zest in a bowl. Toss them together with the mayonnaise, vinegar, parsley and some salt and pepper.

Assemble the sandwich

Assemble the Reuben by spread the Russian dressing on one side of each slice of rye bread. Stack plenty of salt beef, sauerkraut and the slices of Swiss cheese. Top with the other slice of bread dressing side down.

Brush the outside with the melted butter. Heat a non-stick frying pan over a medium heat. Pan fry the sandwich for 3 minutes on each side until the bread is golden brown and the cheese is oozy.
