Blitz Up To A Hummus
Drain the chickpeas and tip into a food processor.
Blitz to get a paste, then with the machine running add the tahini, roasted garlic paste, zest from half the lemon and juice from all of it.
Season with 1 tsp of salt and add in about 1 tablespoon of ice cold water to get a final creamy consistency.
Leave to sit for 30 minutes for the flavours to mingle before serving, drizzled with extra olive oil.
