Recipe: Hummus


Hummus is absolutely perfect for a party... something that everyone can all dig into and enjoy. We'd given this one a go with two versions, a traditional method using dried chickpeas and a cheat's version using tinned chickpeas. Chose your favourite and give it a go!



  • 200 g dried chickpeas
  • 400 g tin of chickpeas (if not using dried)
  • 4 tbsp tahini paste
  • 1 lemon
  • 1 tbsp roasted garlic paste
  • 100 ml olive oil
  • 1 bunch of fresh parsley, to serve
  • 1 tbsp toasted sesame seeds

Pepper And Tomato Variation

  • 50 g roasted red peppers
  • 50 g sun-blushed tomatoes

Sriracha And Honey Variation

  • 1 tbsp honey
  • 1 tsp cracked black pepper
  • 2 tbsp chopped fresh parsley
  • 1 tbsp sriracha sauce

Za'taar Variation

  • 1 tbsp za'taar seasoning
  • 2 tbsp toasted pinenuts
Soak the dried chickpeas

Step 1

Soak The Dried Chickpeas

Soak the dried chickpeas in plenty of cold water overnight along with 1/2 tbsp of the bicarb.

Cook The Soaked Chickpeas

Drain the soaked chickpeas and warm them in a saucepan with the other half of the bicarb for about a minute or two before covering in warm water. Heat to a boil and simmer for 30-40 minutes or until the chickpeas are soft and mushy. During this simmering occasionally skim off any foam that forms or chickpea skins that float.

Blitz up to a hummus

Step 3

Blitz Up To A Hummus

Drain the chickpeas and tip into a food processor. Blitz to get a paste, then with the machine running add the tahini, roasted garlic paste, zest from half the lemon and juice from all of it. Season with 1 tsp of salt and add in about 1 tablespoon of ice cold water to get a final creamy consistency. Leave to sit for 30 minutes for the flavours to mingle before serving, drizzled with extra olive oil.

Cheats hummus

Step 4

Cheats Hummus

Open the tin of chickpeas and drain. Blitz up in a food processor with the tahini paste, roasted garlic paste, zest of half the lemon and juice of the whole thing plus the olive oil. Season with salt and pepper to your own preference once it’s smooth. Serve sprinkled with freshly chopped parsley, toasted sesame seeds and a drizzle of olive oil.

Take 200g of prepared hummus and blitz up in a smaller blender with the roasted peppers and sun-blushed tomatoes.

Take 200g of prepared hummus and beat in the sriracha, honey and black pepper.

Sprinkle with the za’atar seasoning and a handful of toasted pine nuts.
