How To Cook The Pork
Preheat an oven to 200ºC.
Heat the olive oil and butter in a frying pan over a fairly high heat, then remove the pork from the brine and fry for a couple of minutes on each side to gain a golden colour.
Transfer to a baking tray and add the sliced onion, chopped apples and thyme into the same pan to cook in the butter for 2-3 minutes.
Tip the contents of the frying pan onto the baking tray beside the chops, then sit the chops on top.
Bake in the oven for 8-10 minutes, until just cooked through.
